Happy Easter


Easter

I hope everyone and had a wonderful Easter weekend. We had some nice weather Friday and Saturday, warm weather, I could wear slippers… and that was also what made my Easter weekend – sunshine and warmth. It’s on special occasions like this one that I really miss my family. Going to church with my parents and sis and her kids, lunch with my grandparents and everyone, and holidays that mean pure relaxation or outings with friends. Yesterday at mass, I fought back the tears as I sat alone watching families pour in and fill the church; even those who came just for Easter even if they won’t be there again until Christmas. Besides being overwhelmed by the reminder of what Christ did for us, it’s a reminder of the joy and togetherness felt at these special masses and lunches. Luckily, yesterday was spent in the company of friends at lunch and slightly made up for missing home. That’s what friends are for!

I carried this dessert with me that  I know sounds weird but is very tasty and not too sweet, so you should give it a try.

Ingredients:

1 pkg Cream cheese

1 tin of fruit cocktail

1 cup of mini marshmallows

Method:

Blend cream cheese and juice from the fruit cocktail until you have a smooth, creamy mixture. Add the fruit cocktail and marshmallows, stir by hand and set for an hour in the fridge then serve.

See! Simple!! 🙂 (I forgot to take a pic yesterday of this dessert as I was rushing but I will make sure I do next time!)

Lessons

Well I sprained my wrist just over a week ago pulling my carry-on on my way back to Seattle from Las Vegas. I decided to head to the chiropractor today for him to check it out as it was still hurting, so I’m sporting this neon pink tape on my forearm and wrist for the day and tomorrow I guess. I have learnt that if you take a carry-on on a trip, and buy a few pieces, and cram your it, it may be better to check it than drag it through the airport and strain your wrist >_<. Luckily it’s my left hand and I’m right handed so it hasn’t been too much of a damper :).

Help!!!

I’m on a search to find black ballet flats that are comfortable and do not look like something my grandmother would wear or want to borrow. It’s getting warmer here and seeing it rains so much, I need flats as I can’t wear slippers or open shoes often. I’ve learnt that it’s important to spend a little more money on shoes up here, dealing with the seasons, and it’s important that they are of good quality to last quite a while. So I would appreciate your help in recommending some that are youthful, comfortable and reasonable. I’ll continue to search on my own and hopefully I’ll find something soon!

Pffft! (Ramble)


Today I started cleaning my drawers. No I’m not that disgusting I do laundry once a week, so to be more specific, I cleaned my chest of drawers. I wanted to take out all that I know I no longer wear but want to keep and what’s too big for me to wear right now since I lost weight. I’m here rather tired right now from it. Amazing how exhausting wondering what to keep and what to throw away can be. I did my shirts, skirts and shorts so far and some sweaters. I would love to say I no longer have to visit my sweaters or long sleeve tops but it doesn’t seem like Spring wants to be in full effect here…. I can’t even say Vegas gave me a huge break because if I wasn’t directly in the sun it was rather chilly. I’m dying for the shorts and sandals to be my wardrobe but I have a few more weeks to wait I guess.

In dealing with this in-between weather, my skin is taking a serious toll. The eczema doesn’t know if it wants to stay or go so it’s vicious when it pops up and then I have to keep moisturizing my skin to make sure it doesn’t get too dry. I’m thinking of heading to Bath and Body works to pick up a new scrub to try and see if it’ll give me a little boost skin-wise to feel better and absorb the moisture more. I’ll let you know what I grab and how it feels.

Our headboard came today for our bed. I’m sooo excited and it looks amazing! Now I can sit up in bed and read and be comfortable. I spent Monday and Tuesday giving the room a good clean so it wouldn’t be too cluttered and that the true beauty of the bed could now stand out. After all, who wants a new piece of furniture placed in a cluttered room that you can’t even see it properly? My friends would laugh at me using the word “cluttered” because they know my “dirty” is not the normal “dirty” and at least things can still be found, but I just wanted the room to be crisp when the headboard came.

I was really hoping to get to the class today at the gym but my wrist is still hurting. I can’t lift a pan with anything in it and that alone tells me I should stay away from the weights etc. but in doing housework it’s very hard to give myself a rest. I’m really going to try and keep quiet for the  next few days so that I can get back to the gym as soon as possible!

I’m so tired today I really don’t feel like cooking! But I will… I bought some couscous but I’m still looking for that perfect recipe to cook it. My aunt made it yearsssssss ago and I have to email her for her recipe. I just wanted to try something different at home, change up things a little bit. But if you happen to know any please feel free to post it below! I have a dinner to attend this weekend and I’m going to carry a dessert I learned a few years ago with marshmallows, tin fruit and cream cheese.. weird? Yes! Tasty? VERY!!! I’ll take a picture and post so you can see the finished product even though you can’t taste it :(.

I stopped by Half Priced Books yesterday (I think.. don’t remember what day I do anything now :S) and I got a kit and and book to help me with my writing. I’m feeling really positive about it and I think I’ll get back into it and make a push for me to put pen to paper and make something happen. As I get started on this project I’ll share bits and pieces and you can give me a response as to how I’m going :).

Well I’ll end this ramble here for now, I should at least go and season my meat before I leave home.

Back from the Wild!


I’m back!!!! And I will be rambling throughout this post so be prepared! I just returned from a trip to Vegas, it was a really nice last minute trip, literally. My ticket was bought the morning my husband was leaving (for a conference), so I was up until 3am trying to figure out what to pack for the week. It’s a good thing I’m still young because sleep was something not to be had while there. I can’t call it my fave vacation spot right now as the smoking was something that really turned me off. It’s probably best to go for 2 or 3 days, see the shows you want to see and then leave. For some people that week would’ve been a much needed break from their significant other but if there’s one thing my husband and I both LOVE, it’s travelling together. We’re each other’s pillow on flights and we just keep each other laughing all the time making the trip enjoyable even if it seems like a drag. Plus, I was really going to miss him… so why not go?!?

Fortunately the week before I managed to get my “spring cleaning” done. The second bedroom is ready for our summer guests and I just have to work on shredding some papers once I get the shredder going. It felt like when I was a kid and being forced to clean my room but I put on some music and I got through it. I’m just left to work on my room which I’ll work on this week. It’s time to shift around the Winter and Summer clothes so that requires a week for itself >_<…  especially after I just brought home a few extras with me from Vegas…..

One thing I missed this last week was exercising (in the gym). I did plenty walking (and some nights in over 3inch wedges with males who had me chipping). So I’m excited and ready to get back into it as I’ll be damned if I lose all that I worked for with my trainer! I already have a class I’m going to do to push myself, and I’ll have to plan another two visits for this week to make sure I get back into the gym. Unfortunately my left wrist is hurting and I don’t know why so I’m a bit worried about doing Yoga as they always keep you in some position where a lot of weight is placed on the wrist, so we’ll see.

Well I’ll end here for today on this “update” and I will get back to my “meaningful” stuff this week. Think positive and positive will surround you.
